As promised, the list thus far, of healthy (and healthy-ish) foods that either stay fresh long enough that I can finish them before they go bad, or come in small enough quantities that it’s a non-issue:

-sweet potatoes

-tomato soup out of a box

-cabbage

-apples

-avocados

 

Plus, some bonus foods that are just as good (or better) from frozen:

-edamame

-berries

 

It seems like a wimpy list. That would be because it is. It’s really difficult to find fruits and vegetables that aren’t dead-set on returning to the soil from whence they came, and with a quickness.
